What’s your favorite raw salad?

I love raw salads specially with carrots in it for the fiber. Thanks for this recipe. Would I be able to use green cabbage and still get the benefits of red cabbage?
Astrid
Hi Kerry,
Red cabbage has about 10 times more vitamin A than green cabbage. However, red cabbage is the winner when it comes to vitamin K which aids in bone remineralization among other benefits. That being said, I suggest steaming goitrogenic vegetables such as: cauliflower, brussels sprouts, broccoli, cabbage, and collard greens if you suspect or have been diagnosed with Hypothirodism.
Hope this helps.
