Lentil soup is one of my favorite comfort foods during the winter or any season for that matter.  They are relatively quick and easy to prepare, compared to other types of dried beans, so you can make them in your crock pot or simply cook them for a quick dinner.
 
This lentil soup is hearty, filling, ridiculously delicious, but keep in mind that 1 cup of lentils contain 39.86 g of carbs. So if you are watching your carb intake– keep this in mind. 
 The secret to this healing soup is its broth and healing spices – it can be made with grass-fed beef for added collagen (hint: it helps with joint health) or vegetable broth if you don’t eat meat. Try it- you are going to love it.
 
I am told I make a mean lentil soup so I had to share this recipe with you.  All if not most of the ingredients serve a purpose.  Let’s break them down:
  • Lentils are high in iron and protein along with vital vitamins & minerals. The chart below shows you the amazing health benefits of lentils.
  •  
  • health benefits of lentils There is grass-fed beef in it too (I add it to the water with half an onion and use that as a base to make the lentils for bursting flavor) ~ CLA, Vitamin B12
  • Homemade grass-fed beef broth.  The bones release collagen when cooked. Collagen helps regenerate cartilage and even the disc in your spine.
  • Guiso made from scratch ( tomato, red onions, garlic, orange pepper–finely chopped) made in organic extra virgin olive oil.  Contains vitamins C, A, E, beta carotene, lycopene and of course the antiviral properties of garlic and onions.
  • Turmeric ( that is the orange powder you see on top which I add right before eating to preserve its healing benefits). Read more on the amazing benefits of turmeric. 
  • Mixed organic carrots, peas and corn
  • Italian herbs mix added to the “Guiso”

Lentil Soup Featured Nutrient: Molybdenum

Perhaps not as well known as other minerals that we profile on our website, molybdenum is a key mineral nutrient found in a variety of WHFoods and known to play important roles in many different body systems.
Molybdenum is mineral has been shown to be required for the activity of at least seven enzymes in our body, and numerous body systems rely on these enzymes for support. The information below is based on our understanding of these molybdenum-requiring enzymes and their rule in everyday health. Our understanding of molybdenum and human health did not begin with research on humans, but on soil, water, and microorganisms.

Promotes Optimal Sulfur Balance

Sulfur is an element of surprising importance in our health. It’s a unique part of the protein in our food because most foods contain at least small amounts of sulfur amino acids, including taurine, methionine, and cysteine. Sulfur is critical in our ability to detoxify unwanted contaminants, and many contaminants in our food cannot be eliminated from our bodies without the help of sulfur.

Sulfur plays a role in the structure of our connective tissue, through its incorporation into molecules like glucosamine sulfate and chondroitin sulfate. {Remember the joints, tissue, and cartilage supplement}?
We can conclude the same about Molybdenum, based on its required role in the activity of an enzyme called sulfite oxidase (SO). The role of SO is to take one form of sulfur (sulfite) and convert it into another form (sulfate). This step is critical for keeping sulfur moving around in our body as intended and allowing all of the activities described in the paragraph above to take place. In other words, world’s healthiest foods researchers suspect a role for molybdenum in support of liver detoxification, antioxidant support, connect tissue development and other aspects of our health due to the widespread important of sulfur balance throughout our body

Hearty Healing Lentil Soup

  • 1 lb lentils rinsed
  • 1 cup mixed carrots (peas, corn)
  • 3 cups home made grassfed beef (with bone-in broth or I buy this one)
  • 1 red onion
  • ¼ teaspoon pepper (more as needed)
  • 1/2 lbs grassfed beef (get US grass-fed beef here)
  • For the Guiso
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic (minced)
  • ½ red onion finely chopped
  • 1 whole tomato finally chopped or crushed fresh tomatoes
  • ½ red pepper
  • ½ teaspoon ground cumin (omit if you are allergic)
  • ½ teaspoon ground pepper
  • ½ teaspoon Himalayan salt
  • ½ teaspoon turmeric
  1. In a large pot pour 6 cups of filtered water.
  2. Add half the red onion, a garlic clove, the grassfed beef, salt, pepper, and rinsed lentils.
  3. Bring to a boil and turn down the heat to a simmer in low.
  4. Cook for 15-25 minutes.
  5. Meanwhile make the suace (guiso)
  6. Heat the olive oil over medium heat. Add the onion, garlic, red pepper and cook until tender, 8-10 minutes. Add the rest of the ingredients and cook for another 7-10 mins until the guiso has a thick consistency.
  7. Once the guiso is ready go back to the lentils and add the beef broth, mixed precooked frozen vegetables, and the guiso. Simmer on low for another 10 minutes.
  8. To serve, place some of the soup in a bowl, and at this point add healing turmeric and more of the guiso (sauce) if you’d like along with some avocado slices or rice/quinoa . Enjoy!

*** Note:***
If you are going to use fresh vegetables you must add them 10 minutes into cooking the lentils and beef because they take longer to cook.
Use organic ingredients when possible.
